The Greek OT and Vulgate spell his name Sem.

Ge 5:32 (Ge 6:1 in the Septuagint) says Noah was 500 years old when he begot three sons, Shem, Ham, and Japheth. The birth order was probably Japheth, Shem, and Ham. Gen 9:24 Tells us Ham was the youngest son. Gen 10:21 says Shem was "the older brother of Japheth" or "Japheth the older brother" depending on the translation. Gen 11:10 Says Shem was 100 years old two years after the Flood which was when Noah was 602. So, the best interpretation of Gen 10:21 would be the later.
Shem would have been 98 years old when they entered the Ark and was born when Noah was 502 years old. See previous note.
Noah's sons are not listed in birth order, but in importance to the context of the genealogy in Genesis which is the history from Adam to Israel (Jacob).
